  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup chicken broth
  • 2 tbsp honey
  • Salt and pepper to taste
  • 1 tbsp olive oil

Instructions

  1. Trim excess fat from chicken breasts and rinse under cold water. Pat dry.
  2. Season both sides with salt and pepper; add minced garlic on top.
  3. In a bowl, mix soy sauce, chicken broth, and honey until combined.
  4. Set Instant Pot to sauté; add olive oil and sear chicken on each side for 2-3 minutes until golden.
  5. Pour sauce mixture over chicken; secure lid and pressure cook on high for 15 minutes.
  6. Allow natural release for 5 minutes then quick release remaining pressure. Shred chicken using two forks.
