  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 3 medium carrots, sliced
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 cinnamon stick
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and drizzle olive oil in a large oven-safe pot.
  2. Sauté the diced onion for about 5 minutes until soft. Add minced garlic and cook for an additional minute.
  3. Stir in the sliced carrots and chickpeas; mix well.
  4. Sprinkle cumin, coriander, and add the cinnamon stick. Pour vegetable broth over the mixture until just covered.
  5. Cover the pot with a lid or foil and bake for about 60 minutes until everything is tender.
