Ingredients

  • 4 cups fresh spinach (approximately 120g)
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon mirin

Instructions

  1. Wash the spinach thoroughly and remove tough stems.
  2. Bring salted water to a boil and blanch spinach for about 1 minute until wilted. Transfer immediately to an ice bath to cool.
  3. Squeeze out excess water from the cooled spinach using your hands or a clean dishtowel.
  4. In a bowl, mix toasted sesame seeds, soy sauce, sugar, and mirin.
  5. Chop the blanched spinach into bite-sized pieces and toss with the sesame dressing until well coated.
  6. Serve on plates, garnishing with additional sesame seeds if desired.
