- 1 teaspoon sugar
- 1 tablespoon mirin
Instructions
- Wash the spinach thoroughly and remove tough stems.
- Bring salted water to a boil and blanch spinach for about 1 minute until wilted. Transfer immediately to an ice bath to cool.
- Squeeze out excess water from the cooled spinach using your hands or a clean dishtowel.
- In a bowl, mix toasted sesame seeds, soy sauce, sugar, and mirin.
- Chop the blanched spinach into bite-sized pieces and toss with the sesame dressing until well coated.
- Serve on plates, garnishing with additional sesame seeds if desired.
