  • 2 pounds butternut squash, peeled and cubed
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons maple syrup
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt to taste
  • Pepper to taste
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. In a large bowl, toss cubed butternut squash with olive oil, maple syrup, cinnamon, nutmeg, salt, and pepper until well coated.
  3. Spread the seasoned squash evenly in the baking dish and roast for 25-30 minutes until tender.
  4. Sprinkle chopped pecans over the top of the casserole and return it to the oven for an additional 5 minutes to toast.
  5. Remove from the oven, let cool slightly, and serve warm.
