  • 4 medium bell peppers (red, yellow, or orange)
  • 1 cup fresh mushrooms (button or cremini), chopped
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 tsp dried basil or oregano

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.
  3. In a skillet over medium heat, heat olive oil. Sauté onions and garlic until fragrant, about 2 minutes. Add mushrooms and cook until browned.
  4. Stir in cooked rice, season with salt, pepper, and herbs. Mix well.
  5. Fill each pepper with the mushroom mixture and top with shredded cheese.
  6. Cover the baking dish with foil and bake for 25-30 minutes until peppers are tender. Remove foil for the last 5 minutes to melt the cheese.
