- 1 lb baby or Yukon gold potatoes, halved
- 4 tbsp unsalted butter
- 4 cloves fresh garlic, minced
- 2 tbsp olive oil
- 2 tbsp lemon juice (freshly squeezed)
- Salt and pepper to taste
- 1 tsp dried thyme or rosemary (optional)
Instructions
- Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
- Season chicken breasts with salt and pepper on both sides and place them in the prepared dish.
- In a bowl, toss halved potatoes with olive oil, salt, pepper, and dried herbs until well coated.
- Melt butter in a saucepan over low heat; add minced garlic and sauté until fragrant. Mix in lemon juice.
- Pour half of the garlic butter over the chicken and drizzle the rest over the potatoes.
- Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
