  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 lb baby or Yukon gold potatoes, halved
  • 4 tbsp unsalted butter
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • Salt and pepper to taste
  • 1 tsp dried thyme or rosemary (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Season chicken breasts with salt and pepper on both sides and place them in the prepared dish.
  3. In a bowl, toss halved potatoes with olive oil, salt, pepper, and dried herbs until well coated.
  4. Melt butter in a saucepan over low heat; add minced garlic and sauté until fragrant. Mix in lemon juice.
  5. Pour half of the garlic butter over the chicken and drizzle the rest over the potatoes.
  6. Bake for 30-35 minutes until chicken reaches an internal temperature of 165°F (75°C) and potatoes are golden brown.
