- 2 medium Yukon Gold potatoes (about 300g), diced
- 1 cup bell peppers (any color), chopped
- 1 medium yellow onion, diced
- 4 large eggs
- 1 cup cheddar cheese, shredded
- 2 tbsp olive oil
- Salt & pepper to taste
Instructions
- Wash and dice the potatoes into small cubes. Chop the bell peppers and onion.
- In a large skillet over medium heat, add olive oil. Once hot, add diced potatoes along with salt and pepper. Cook until golden brown and tender (10-12 minutes).
- Add onions and bell peppers to the skillet; stir until softened (about 5 minutes).
- Make wells in the mixture and crack eggs into them. Cover with a lid; cook until whites are set but yolks are runny (about 6 minutes).
- Sprinkle cheese over the top and cover for another minute until melted.
- Serve immediately while hot, garnished with fresh herbs if desired.
