  • 1 head green cabbage, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, chopped
  • 1 medium onion, diced
  • 4 cups low-sodium vegetable broth
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop all vegetables: slice cabbage into thin strips, dice carrots and celery, and finely chop onion.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté onion for about five minutes until translucent; then add minced garlic and cook until fragrant.
  3. Add carrots, celery, and cabbage to the pot. Stir and cook for five minutes until they start to soften.
  4. Pour in the vegetable broth and add diced tomatoes. Season with thyme, salt, and pepper.
  5. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30 minutes to meld flavors.
  6. Serve hot in bowls with optional fresh herbs on top.
