Instructions
- Chop all vegetables: slice cabbage into thin strips, dice carrots and celery, and finely chop onion.

- Add carrots, celery, and cabbage to the pot. Stir and cook for five minutes until they start to soften.
- Pour in the vegetable broth and add diced tomatoes. Season with thyme, salt, and pepper.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for 30 minutes to meld flavors.
