- 1 cup all-purpose flour

- 1/2 cup powdered sugar

Instructions
- Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
- In a mixing bowl, beat eggs with an electric mixer until frothy. Gradually add sugar and mix until pale and thick.
- In another bowl, whisk flour and baking powder together. Gently fold into the egg mixture until just combined.
- Pour batter into the prepared pan and bake for 12–15 minutes or until it springs back when lightly touched.
- Remove from oven, invert onto a powdered sugar-dusted towel, and roll up the cake with the towel inside to cool.
- For the filling, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
- Unroll cooled cake, spread filling evenly, then carefully roll it back up without the towel. Decorate with fresh berries.
