  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup mascarpone cheese
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • Fresh strawberries and blueberries for decoration

Instructions

  1. Preheat oven to 375°F (190°C). Line a jelly roll pan with parchment paper.
  2. In a mixing bowl, beat eggs with an electric mixer until frothy. Gradually add sugar and mix until pale and thick.
  3. In another bowl, whisk flour and baking powder together. Gently fold into the egg mixture until just combined.
  4. Pour batter into the prepared pan and bake for 12–15 minutes or until it springs back when lightly touched.
  5. Remove from oven, invert onto a powdered sugar-dusted towel, and roll up the cake with the towel inside to cool.
  6. For the filling, mix mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  7. Unroll cooled cake, spread filling evenly, then carefully roll it back up without the towel. Decorate with fresh berries.
