  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 2 cups cherry tomatoes, halved
  • 4 oz cream cheese
  • 4 oz feta cheese, crumbled
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper on both sides.
  3. In a skillet over medium heat, add olive oil and sauté minced garlic until fragrant (about 1 minute).
  4. Stir in cherry tomatoes and cook until softened (approximately 5 minutes).
  5. Lower the heat and add cream cheese and crumbled feta; stir until melted and creamy. Mix in oregano.
  6. Place seasoned chicken in the baking dish and pour the feta-tomato sauce over it.
  7. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  8. Serve hot, drizzled with any remaining sauce.
