- 2 cups fresh corn kernels (or frozen)

- 2 medium potatoes, peeled and cubed

- 1 cup heavy cream
- 4 sprigs fresh thyme (or 1 tsp dried)
Instructions
- Dice the chicken and chop the onion and garlic.
- In a large pot over medium heat, add olive oil. Sauté onions and garlic until translucent (about 5 minutes).
- Add diced chicken, season with salt and pepper. Cook until golden brown (approximately 7 minutes).

- Mix in corn kernels and heavy cream; add thyme. Simmer for another 5 minutes to blend flavors.
