  • 4 cloves garlic, minced
  • 2 large carrots, diced
  • 2 celery stalks, diced
  • 6 cups low-sodium chicken broth
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 tsp Italian seasoning
  • 4 cups fresh spinach or kale

Instructions

  2. Add chicken breasts and cook until golden brown on both sides (5-7 minutes per side).

  4. Add spinach or kale and let wilt for about 3 minutes.
  5. Remove chicken, shred it with two forks, then return to the pot. Stir well and adjust seasonings before serving.
