- 4 cups ripe tomatoes (quartered)
- 1 medium onion (quartered)
- 4 cloves garlic (whole)
- 2 cups low-sodium vegetable broth
- 2 tbsp olive oil
- Salt & pepper to taste
- 1/4 cup fresh basil leaves
- 8 oz sharp cheddar cheese (sliced)
- 4 slices bread (sourdough or whole wheat)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place tomatoes cut side up, add onions and garlic, drizzle with olive oil, and season with salt and pepper. Roast for 25-30 minutes until caramelized.
- Transfer roasted vegetables to a blender, add vegetable broth and basil, then blend until smooth.
- For grilled cheese, butter one side of each slice of bread. Layer cheddar between two slices, buttered sides out.
- Heat a skillet over medium heat and grill sandwiches until golden brown on both sides, about 3 minutes each.
- Serve soup hot in bowls alongside grilled cheese sandwiches.
