  • 1 medium cauliflower (about 600g), cut into florets
  • 2 medium sweet potatoes (about 400g), peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth (1 liter)
  • 1 cup full-fat coconut milk (240ml)
  • 2 tbsp olive oil (30ml)
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic; sauté until fragrant, about 3 minutes.
  2. Add cauliflower florets and sweet potato cubes; stir for about 5 minutes until slightly softened.
  3. Pour in vegetable broth to cover the vegetables. Bring to a gentle boil, then reduce heat and simmer for 20 minutes or until fork-tender.
  4. Remove from heat and blend the soup until smooth using an immersion blender or by carefully transferring to a regular blender.
  5. Stir in coconut milk over low heat; season with salt and pepper to taste.
