  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) coconut milk
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté chopped onions until translucent (about 5 minutes), then add minced garlic and sauté for another minute.
  2. Stir in chopped carrots and cumin; cook for an additional 5 minutes.

  4. Blend the soup until smooth using an immersion blender or regular blender.
