  • 2 medium carrots, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes, with juice
  • 2 bay leaves
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the cabbage into bite-sized pieces and slice the carrots thinly. Dice the onion and mince the garlic.
  2. In a large pot over medium heat, add olive oil. Sauté onions for about 5 minutes until translucent; add garlic towards the end.
  3. Stir in chopped cabbage and sliced carrots; cook for another 5 minutes until cabbage wilts.
  4. Pour in vegetable broth and canned tomatoes (juice included). Add bay leaves, thyme, salt, and pepper; bring to a boil.
  5. Reduce heat to simmer for at least 30 minutes to meld flavors.
  6. Taste and adjust seasonings if needed before serving hot garnished with parsley if desired.
