  • 1 lb boneless skinless chicken thighs
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sharp cheddar cheese, shredded
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish with non-stick spray.
  2. Finely dice the onion and mince the garlic.
  3. In a skillet over medium heat, add olive oil. Season chicken thighs with salt and pepper; sear until golden brown, about 5 minutes per side. Remove from skillet.
  4. In the same skillet, sauté onions until translucent (about 3 minutes), then add garlic until fragrant.
  5. Layer the seared chicken in the baking dish, pour cream of mushroom soup over it, and sprinkle cheddar cheese on top.
  6. Cover with foil and bake for 25 minutes; remove foil during the last 5 minutes to brown the cheese.
