  • 4 cups low-sodium vegetable broth

  • 8 oz cream cheese, cubed
  • 2 cups fresh spinach, roughly chopped
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Pour the tomato sauce and crushed tomatoes into the crockpot. Add vegetable broth and stir well.
  2. Place cubed cream cheese in the pot without blending.
  3. Season with Italian seasoning, salt, and pepper.
  4. Cover and cook on low for 4 hours.
  5. About 15 minutes before serving, add tortellini to the pot.
  6. Stir in fresh spinach just before serving.
