Ingredients

  • 8 rice paper wrappers
  • 1 cup carrots, julienned
  • 1 cup cucumbers, thinly sliced
  • 1 cup red bell peppers, thinly sliced
  • 1 avocado, sliced
  • ¼ cup fresh mint leaves
  • ¼ cup fresh cilantro leaves
  • ½ cup creamy peanut butter
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey or maple syrup
  • 2 tbsp lime juice
  • Water to adjust consistency

Instructions

  1. Prep your veggies by washing and cutting them into appropriate sizes.
  2. Soften each rice paper wrapper by dipping it in warm water for about 10 seconds until pliable.
  3. Lay the softened wrapper on a clean surface. Layer in carrots, cucumbers, bell peppers, avocado slices, and herbs in the center.
  4. Fold in the sides of the wrapper and roll tightly from one end to another.
  5. For the peanut sauce, whisk together peanut butter, soy sauce, honey or maple syrup, lime juice, and water until smooth.
  6. Serve the roll-ups drizzled with peanut sauce or on the side.
