- 1 cup carrots, julienned
- 1 cup cucumbers, thinly sliced
- 1 cup red bell peppers, thinly sliced
- 1 avocado, sliced
- ¼ cup fresh mint leaves
- ¼ cup fresh cilantro leaves
- ½ cup creamy peanut butter
- 2 tbsp low-sodium soy sauce
- 1 tbsp honey or maple syrup
- 2 tbsp lime juice
- Water to adjust consistency
Instructions
- Prep your veggies by washing and cutting them into appropriate sizes.
- Soften each rice paper wrapper by dipping it in warm water for about 10 seconds until pliable.
- Lay the softened wrapper on a clean surface. Layer in carrots, cucumbers, bell peppers, avocado slices, and herbs in the center.
- Fold in the sides of the wrapper and roll tightly from one end to another.
- For the peanut sauce, whisk together peanut butter, soy sauce, honey or maple syrup, lime juice, and water until smooth.
- Serve the roll-ups drizzled with peanut sauce or on the side.
