Ingredients

Scale
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes (no added sugars)
  • 4 large eggs
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

  2. Add minced garlic and cook until fragrant (about 1 minute).
  3. Pour in diced tomatoes with juices; sprinkle with cumin and paprika. Simmer for about 10 minutes until thickened.
