Ingredients

  • 2 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled cotija cheese
  • 1 cup sweet corn (fresh or frozen)
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp chili powder
  • 1/2 cup sour cream
  • 2 tbsp freshly squeezed lime juice
  • 1/2 tsp ground cumin

Instructions

  1. Gather all ingredients. If using fresh corn, roast it in a skillet over medium heat for about 5 minutes until slightly charred.
  2. In a small bowl, mix sour cream, lime juice, cumin, salt, and pepper until smooth.
  3. On one half of each tortilla, layer mozzarella cheese, roasted corn, cilantro, chili powder, and additional cheese.
  4. Heat a non-stick skillet over medium heat. Fold tortillas in half and cook for about three minutes on each side until golden brown and melty.
