- 2 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled cotija cheese
- 1 cup sweet corn (fresh or frozen)
- 1/4 cup fresh cilantro, chopped
- 1 tsp chili powder
- 1/2 cup sour cream
- 2 tbsp freshly squeezed lime juice
- 1/2 tsp ground cumin
Instructions
- Gather all ingredients. If using fresh corn, roast it in a skillet over medium heat for about 5 minutes until slightly charred.
- In a small bowl, mix sour cream, lime juice, cumin, salt, and pepper until smooth.
